Vegetarian Chili is a hearty and flavorful comfort dish that’s perfect for chilly days. This recipe features a medley of beans, vegetables, and spices, creating a satisfying and nutritious meal that’s loved by all.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 1 zucchini, diced
- 1 cup corn kernels
- 2 cans (15 oz each) diced tomatoes
- 2 cans (15 oz each) beans (such as kidney beans, black beans, or pinto beans), drained and rinsed
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado
Instructions:
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and cook until softened, about 5 minutes.
- Add diced bell peppers, zucchini, and corn kernels to the pot. Cook for another 5 minutes, until vegetables are slightly tender.
- Stir in diced tomatoes, beans, vegetable broth, chili powder, cumin, salt, and pepper. Bring the chili to a simmer.
- Reduce heat to low and let the chili simmer, uncovered, for about 30 minutes, stirring occasionally, until the flavors have melded and the chili has thickened.
