Chicken Quesadillas are a cheesy and flavorful Tex-Mex favorite that’s perfect for lunch, dinner, or snacking. This recipe features tender seasoned chicken, melted cheese, and crispy tortillas, creating a satisfying and delicious dish that’s sure to please everyone at the table.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 packet taco seasoning
- 4 large flour tortillas
- 2 cups shredded cheese (such as cheddar or Monterey Jack)
- Salsa, sour cream, guacamole for serving (optional)
Instructions:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
- Season chicken breasts with taco seasoning on both sides.
- Heat olive oil in a skillet over medium heat. Add seasoned chicken breasts and cook until golden brown and cooked through, about 5-6 minutes per side. Remove from heat and let cool slightly, then shred the chicken using two forks.
- Place two flour tortillas on the prepared baking sheet. Divide shredded cheese evenly between the tortillas, spreading it out to cover the surface.
- Top the cheese with shredded chicken, then place the remaining two flour tortillas on top to form quesadillas.
- Bake Chicken Quesadillas in the preheated oven for 10-15 minutes, or until the cheese is melted and the tortillas are crispy and golden brown.
- Remove from the oven and let cool slightly before slicing into wedges.
