Egg Fried Rice is a quick and flavorful dish that’s a staple in Chinese cuisine. This recipe features fluffy scrambled eggs, mixed with rice, vegetables, and savory seasonings, creating a satisfying and delicious meal that’s perfect for busy weeknights or as a side dish.
Ingredients:
- 3 cups cooked rice (preferably cold, day-old rice works best)
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Green onions for garnish
Instructions:
- Heat vegetable oil in a large skillet or wok over medium heat. Add beaten eggs and cook, stirring gently, until scrambled. Remove the scrambled eggs from the skillet and set aside.
- In the same skillet, add diced onion and minced garlic, and cook until softened, about 2-3 minutes.
- Add mixed vegetables to the skillet and cook until tender, about 3-4 minutes.
- Stir in cooked rice, soy sauce, and oyster sauce (if using). Cook, stirring constantly, until the rice is heated through and evenly coated in the sauce.
- Return the scrambled eggs to the skillet and toss with the rice and vegetables until well combined.
- Season Egg Fried Rice with salt and pepper to taste. Garnish with chopped green onions before serving.
