Pasta Carbonara is a rich and indulgent Italian dish that’s sure to impress. This recipe features spaghetti tossed in a creamy sauce made with eggs, Parmesan cheese, and crispy pancetta, creating a decadent and satisfying meal that’s perfect for pasta lovers.
Ingredients:
- 8 oz spaghetti or fettuccine pasta
- 4 oz pancetta or bacon, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, cook diced pancetta over medium heat until crispy and golden brown, about 5-7 minutes. Add minced garlic to the skillet and cook for another minute until fragrant. Remove from heat.
- In a bowl, whisk together eggs, grated Parmesan cheese, salt, and pepper.
- Return the skillet with the cooked pancetta and garlic to low heat. Add cooked pasta to the skillet and toss to coat in the pancetta drippings.
- Quickly pour the egg and Parmesan mixture over the pasta, tossing continuously to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce seems too thick, add a splash of reserved pasta water to loosen it up.
- Season Pasta Carbonara with additional salt and pepper to taste. Garnish with fresh parsley before serving.
